Hosting Your Very Own Galentine's Day Brunch!

Valentine's Day is great and all, but it’s a day full of high expectations (AHH THE STRESS). You can only really celebrate if you're in a relationship, which doesn't make it very inclusive or very fun if you're not in one. This year at Colavita, we’re making the month of February a celebration of love and loving others, especially your friends! Going along with the Parks and Rec theme – TREAT YO SELF!—treat yo closest friends and gal pals on Galentine's Day with these delicious and healthy recipes.
Coined by the very amazing Leslie Knope, February 13th, AKA Galentine's Day (in her words) is only the best day of the year! And I’m here to ensure that you have the best recipes to make this day of ladies celebrating ladies a fabulously tasty one. Traditionally (still a very recent tradition) on Galentine's Day, you have a sit-down brunch with your closest friends and if you’re Leslie Knope, you eat waffles! Colavita's got you covered with a list of classic brunch dishes (including waffles!), that even keep our New Year's resolutions of eating better. They’re all health-conscious and heart healthy dishes. Specifically, this menu has a few recipes that feature beets! The super-food is packed with nutrients including Vitamin C, potassium, folate, and more. Plus, it’ll add a touch of pink and red to your meal that will make it a little more festive for this Galentine's. It's beet-tastic!
You simply can’t have a Galentine's Day brunch without waffles, but plain waffles can be boring. Have no fear, we have a scrumptious sweet and savory Beet Waffle recipe that has just the right amount of twist on the classic breakfast item. The beets in the batter will give the waffle the slightest touch of pink, making it oh so pretty. It’s served with a side of Maple Crème Fraiche and topped with a sunny-side up egg. The recipe calls for beet purée so plan ahead to roast your beets in time for brunch!
NOTE: For the beet purée, add in the Colavita Extra Virgin Olive Oil, the egg, the flour, sugar, baking powder and salt. Mix well, the batter will be very thick.
You can’t have a celebratory brunch without a refreshing cocktail, so we at Colavita have tried and tested the best and most aesthetically pleasing drink. It’s pretty, it’s pink, it’s the Pomegranate Sparkling Cosmo! We're certain it’ll be a crowd pleaser because who doesn’t love a good cosmo? This cocktail calls for pomegranate juice instead of cranberry, and a splash of sparkling wine to give it that extra zing, perfect for brunch.
NOTE: Fill the glass ¾ full of the cocktail mixture, then top it off with sparkling wine or seltzer!
Up next is another beet recipe, a Beet Tart! This recipe also calls for lots of roasting, so double up your portions and you'll be able to get all the roasting done at once for both the waffles and the tart! Use a puff pastry for the crust to simplify this recipe. Layer the roasted beet slices on the puff pastry sheet and feel free to add a variety of different colored beets to make a rainbow effect! Finish off the tart with a sprinkle of crushed pisrtachios and fresh thyme and a drizzle of Colavita Balsamic Glaze.
NOTE: Before cooking, drizzle the puff pastry with 1 tbsp Colavita Extra Virgin Olive Oil. You can use a pastry brush to brush the dough with olive oil.
These tasty and healthy Tuna and White Bean Radiccio Lettuce Wraps add some protein to your brunch menu. Instead of plain lettuce, we’re using radicchio for the wrap because it’s very high in antioxidants and vitamins, and it’s also going to spruce up the table with some color (very important for a Galentine's brunch). This wrap is quick and easy to make, just toss canned tuna, white beans, lemon juice, and zest together and make your wrap! Create the perfect complimentary vinaigrette by blending our Colavita Extra Virgin Olive Oil, Colavita Prosecco Vinegar, shallots, raw honey, parsley, dill, and basil with some salt and pepper, of course.
It's what we've all been waiting for—DESSERT! And don't I have the perfect light and fluffy but decadent Pink TIramisu recipe for you. To make these cute individualized dessert minis, bake your tirimisu cake as usual. Using a cookie cutter, cut the baked cake into rounds and layer them in shot glasses along with the white chocolate creme. Top with chopped pistachios and fresh raspberries! And there you have it! — YUMMMM!
