A Very Happy Colavita Thanksgiving

It’s time once again. Time to gather the basters, roasting pans, gravy boats, jello-molds, casserole pans, serving tongs, instant read thermometers, and draw string pants…
Whether you are hosting your own, attending a Friendsgiving, or contributing to the family potluck, Thanksgiving is coming on strong, and we are faced with pertinent questions such as:
- How to stuff the perfectly roasted turkey?
- What to make for the vegan and/or vegetarian guests?
- How much is too much PIE??
- What are the most compatible sides, appetizers, and starchesto serve?
Here at Colavita, we know that Thanksgiving is an American holiday, but we are also an Italian Family brand. The two traditions have melted together in a beautiful combination of flavors, foods, and fun.
What we present for you here is a collection of some of our favorite Thanksgiving recipes with notes and tips to help you navigate the big day.
In an Italian American household, every holiday meal starts with an antipasto platter. This is an Italian term for a bunch of appetizers, usually consisting of cured meats, cheeses, olives, roasted peppers, artichoke hearts and the like.

But even with all this antipasto deliciousness, the key is to NOT fill up on apps before the main event —the turkey—is served.
For the turkey lovers out there, we have a few grand slam suggestions from the Colavita recipe library.
First is a Cranberry Balsamic Glazed Turkey.
This recipe uses Colavita’s Balsamic Vinegar of Modena as a base for a tangy and sweet glaze. TIP: Breaking up the turkey into parts before roasting allows a more event roast and takes less time.

A turkey breast is butterflied, stuffed with herbs and parmesan cheese, and then wrapped in pancetta. The "turducken" can’t even compare.

People have mixed emotions on turkey. Personally, I have a few relatives that are not fans. My mom and I both like turkey – we actually enjoy the taste of it. My father hates it. He makes a lot of comments about when the lasagna is going to be served. Or the spaghetti...on and on. Pasta is really his meal of choice on any given day.
Thankfully (holiday pun intended), pasta is easily worked into the Thanksgiving menu, either as a side or as a main dish. It can also offer a vegetarian or vegan option.

Too many carbs for you?
